Delicious quinoa salad recipe

For the salad:

- 1 cup quinoa, washed

- 2 cups water or vegetable broth

- 1 cup cherry tomatoes, halved

- 1 red bell bell pepper, diced

- 1/2 red onion, finely diced

- 1/2 cup fresh parsley, chopped

- Quarter cup fresh mint leaves, chopped

- One-half cup crumbled feta cheese (optional for garnish)

- Salt and pepper to taste


For the marinade:


- 1/4 cup extra virgin olive oil

- 2 tablespoons lemon juice (about 1 lemon)

- 2 cloves minced garlic

- 1 teaspoon honey or maple syrup (optional for sweetening)

- Salt and pepper to taste


PREPARATION:


1. Cook quinoa:

- In a medium saucepan, combine the washed quinoa with water or vegetable broth.

- Bring to a boil, then reduce heat, cover and simmer for 15-20 minutes or until quinoa is tender and has absorbed the liquid.

- Remove the pot from the heat and let cool.


2. Prepare the sauce:

In a small bowl, whisk together extra virgin olive oil, lemon juice, minced garlic, honey or maple syrup (if desired), salt and pepper. Set aside.


3. Assemble:

- In a large bowl, combine the cooked and cooled quinoa with the cherry tomatoes, cucumber, red bell bell pepper, red onion, fresh parsley and fresh mint leaves.


4. Add the sauce:

- Pour the dressing over the salad ingredients in the bowl.


5. Toss and season:

Toss the salad gently to make sure all ingredients are well coated with the dressing.

Season with additional salt and pepper if needed.


6. Decorate and serve:

- If desired, garnish the quinoa salad with crumbled feta cheese.

Serve the salad immediately or refrigerate for a few hours to allow the flavors to combine before serving.
